Remember that time I said that I try to eat mostly paleo?

Oh yea, that’s right, I did say that.

The past few weeks have been a huge adjustment for me, a “so much to do, so little time” type of living, with my new adult schedule.  Needless to say I have slightly let my Paleo ways fall to the wayside for every meal.  But then that reminded me of a conversation that I had with Molly and Jess the other weekend regarding “diets” and “lifestyles”.  Just to clarify, when you really think about it, there is a huge difference between a diet and a healthy lifestyle.  Not to say that one is better than the other, but they aren’t really something to be compared.  From my perspective, when you say you’re on a diet, I see that as a strict way of eating and living for a set amount of time.  When you say that you have a lifestyle {for example, a Paleo lifestyle}, that is more of a general term.  You live your life flexibly while following a set of rules and guidelines.  So yes, I try to lead a Paleo lifestyle, but if I want to eat a cup of froyo every now then, I will.  Or if I want slice of pizza?  Okay fine, I’m not going to die or gain 20 pounds, but it’s important to monitor your intake and be self aware.  That way you can successfully lead your respective “lifestyle” for your life {get it?  Lead a lifestyle for your entire life? Funny concept}.

Alright so onto today’s recipe that I eat on the reg while I lead my “lifestyle”…

I love experimenting with recipes, but it’s always nice to have a couple basic recipes that you keep on rotation to pull out whenever you want.  This recipe is one of them.

First, I always have to make sure I have this baby in stock:

It doesn’t have to be the Trader Joe’s brand, any Taco Seasoning mix will do.  I then make sure that I have some form of these few things:  meat, bell pepper, onion, tomatoes, avocados, lettuce, and salsa.

Then I follow the most basic directions possible:

Basic Paleo Fajita Chicken (2 servings)

Ingredients:

2 Chicken Breasts, chopped
1 Green Bell Pepper, chopped
1/2 Red Onion, chopped
1 cup of tomatoes, chopped
1 Avocado (1/2 each)
Shredded/Chopped Lettuce (for the “bed”)
Salsa* (optional)
Lemon Wedge* (optional)

Directions:

1.  Chop up meat and veggies, and season with taco seasoning in a skillet.
2.  While the previous ingredients are cooking, chop the lettuce (or pull some salad mix out of a bag) and lay in on the plate.  Also cut the avocado in half and into cubes.
3.  Once the ingredients in the skillet are cooked, serve on top of the bed of lettuce and add a splash of salsa.

And then in true Christine fashion, I would mix everything together and chow down.

It’s the poor man’s paleo….and it’s really friggin’ good.
