Today I visited my frist Bodypump class at my new gym, and I am officially in love.  As you may know, Wednesdays are my off days, and conveniently enough there is a Bodypump class at 9:30am every Wedneday {for free}.  For a day off, 9:30 is perfect.  Just enough time to kind of sleep in, and then a convenient way to wake up, ensuring that I’m going to have a great day.  I don’t know about you, but if I can get a super sweaty workout done in the morning, then there’s hardly anything that can bring me down for the rest of the day.

For those of you who don’t know, Bodypump is an amazing class that involves lower weight, higher reps {more info in the link above}, and a lot of pulsing.  I’m still feeling it in my arms tonight.  When I went to send massive texts out to exclaim my love for the class, my arms actually shook a little bit.  I still have a little while to get back to where I was, but this class is clearly going to help catepolt me to where I want to be.  This was my first Les Mills class, so I’m excited to see what the rest are like, especially RPM {spinning}.

Today was a day of getting odds and ends done.  I had originally planned to go on the NODA Brewery run again with my brother tonight, but I got stuck in traffic running errands {grr!}.  On the other hand, I can hardly walk or sit down without feeling like I’m 87, so going on a group run may have been difficult.  Next Wednesday, and every Wednesday after, I plan on going to Bodypump in the morning and the NODA Brewery Run in the evening.

The one thing I wasn’t going to change, was the already scheduled “family dinner” with my roommates and my brother.  I’ve decided that since I have the time to, I’m going to prepare a group meal for all of us on Wednesdays.  I love cooking, and while my current schedule has allowed me to become adventurous in the breakfast relm, I haven’t really had time to cook anything else.  Today’s meal, however, didn’t require much cooking because I dusted off my old friend, the Crockpot.  I decided to make one of Jimmy’s favorite meals, Hawiian Crockpot Chicken.  I originally found this recipe on the blog, Notes From the Nelsens about two years ago.  Like anything for the Crockpot, throw in a few simple ingredients and you’re good to go!  I especially like how she uses this Hawaiian BBQ sauce found specifically at Target.

Ingredients:
8 Boneless Chicken Breast Tenderloins, frozen
1 Bottle Archer Farms Hawaiian Style Barbecue Sauce (from Target)
1 20 oz. can Pineapple Chunks, drained
1 large sweet onion
2 cloves of garlic
1/2 cup of your favorite shredded cheese

I tried to keep the cheese off of a corner for myself, but it all blended together {duh, Christine}.  Oh well, a little cheese won’t kill me.

Before serving, shred the chicken and lay it on a bed of rice, side it off with some greens and presto!  Dinner is served!  Pretty soon I’m going to invest in a Ninja, and when I do I’m going to make so much cauliflower rice.  Cauliflower rice fo days.  Next time I make this {or any other rice dish for that matter} I would sub that for the actual rice.

Deeeelicious.  I love adding Spike to my green beans, it gives them the perfect amount of flavor.
