Gooooooooood Morning Charlotte!  Today I wanted to share a hearty breakfast scramble that I created earlier.  Packed full of veggies, protein, and omega-3’s, it’s sure to start your day off right.  One key ingredient to this baby is salmon.  To make it all that much easier, I like to use this Alaskan Salmon from Trader Joe’s:

And then a chopped variety of the usual suspects:

You can use any veggies you want, but this is what I had on hand. This recipe is meant to serve two, so I’ll have this for breakfast again tomorrow morning.

Ingredients (serves 2):

4 eggs
6-8 cherry tomatoes, chopped
1/3 cup of zucchini, chopped
1/3 cup of summer squash, chopped
1/3 cup of bell pepper, chopped
1/2 of the salmon from TJ’s {wrap up the other half for something else}
Salt, pepper, and garlic powder to taste
1/2 Avocado {to put on the side}

To prepare, I cooked everything but the eggs and avocados in a skillet on medium heat.  Once they were softened and cooked through, I added the eggs and the garlic powder and S&P.

Add some avocado, Sriracha, and fruit on the side and you’re all set.  I love adding Sriracha to my breakfast-anything {except pancakes, duh}.  Try this out and let me know what you think!
