Today started off with my second Body Pump class {wahoo! friggin’ love that workout}.  Run club later with my brother, thinkin’ I’m gonna do the 5-miler today.  Call the sweat squad, it’s hawt down here.

I had a few errands to run, and I also had a free smoothie coupon to redeem that was in the welcome package from my gym.  After the class I ordered the “Lean Machine Passion Fruit Smoothie” a high protein bev with added fiber and nutrients.  I don’t know, I was hungry, it was free…

It actually was pretty good…but I like my smoothies better :).

Today I wanted to share a recipe that I whipped up for breakfast before work yesterday.  It basically came to me in a dream the night before and it was glorious.  So I decided to bring it to life.  I was also really excited about it because I am low on ingredients round these parts {that actually reminds me, I need to go to Trader Joe’s later}, but even though I was at the bare minimum I was still able to create it!

Enter:  Spicy Naked Breakfast Burgers {They’re Naked b/c there’s no bun…}

The basis of this meal is the Turkey Burger.  Soon, I plan on making a huge batch of homemade burgers and freezing them so that I can instantly make this or something like it whenever I want.  Jimmy had some Turkey Burgers from TJ’s so I snuck one {oopsies, I’ll replace it laterrrr…maybe}.  These babies are actually pretty decent for being prepackaged frozen burgers.  Just three ingredients:  Ground Turkey, Kosher Salt, and Rosemary Extract…Ta-Daa!  Below are the ingredients:

1 Frozen Turkey Burger
1/8th cup of sliced red onion
1 egg
Guacamole
1 Tbsp of coconut oil for cooking
Sriracha to top

For the Guacamole:
1 Avocado
1 Tbsp of chopped Red Onion
Juice from one lemon wedge
Salt, Garlic Powder, and Pepper to Taste

Directions:

1.  Begin by cooking the onions in the coconut oil.  During this time, make the guac…just add all the ingredients in a bowl and mash until there’s a smooth, guacamol-ey consistency.

2.  Add the burger to the skillet and cook until done, should take about 5-7 minutes.  Then proceed by following the nifty four square image below.

3.  Add the guac and onions, fry the egg and add the Sriracha.  I only used half of the guacamole that I made.  I gave Jimmy the other half {a fair trade for the Turkey Burger?  Sure}.

Not the most attractive aerial view, but of course, half a grapefruit a day keeps the doc away.

This makes me hungry all over again by simply looking at it.  I just can’t quit you, fried egg.

Throwing an egg and any combo of veggies on a burger could make this a great way to do breakfast, so what do you guys think?

Alright, done for the day…now off to catch some rays before run club.  {whatever, you guys get Saturdays off, I don’t}
